Ok, So most of my recipes I just throw together from a combo of recipes that I have seen or have. I always thought my mom was crazy when she said that she just threw a little of this and a little of that in and she NEVER had a recipe. Well now that I actually know HOW to cook I get it. :-)
So here you go. Hope you like it.
Monday was French Toast and chicken breakfast sausage (Not with homemade french bread like it was supposed to be) That was an epic fail :(
I used french bread obviously.
In my egg and milk mixture, I put some vanilla and cinnamon sugar (mixed like you would put on regular toast)
Be sure to drench the toast in the egg mixture. It is way better that way.
The chicken breakfast sausage came from Gerber's Poultry. You can't taste the difference at all.
I cooked it in my broiler. BUT BE SURE NOT TO OVER COOK IT like I did. :-)
Today (Tuesday) is MEATBALLS AND POTATO CAKES
this meatball recipe comes from a combo of 2 recipes in my "FAMILY FAVORITES FALL2000" COOKBOOK FROM KIDRON MENNONITE CHURCH.
2lbs of hamburger
1/2cup - 3/4 cup bread crumbs (I WILL ALSO USE RITZ CRACKERS) gives it an awesome taste :-)
1 small onion, chopped fine
2 eggs
Salt and Pepper
1 tsp. of mustard
**** Mix all together and make into balls and place in a baking dish.
SAUCE
1 cup Ketchup (we all know how I LOVE ketchup)
2 T. mustard
3/4 cup brown sugar
Salt and Pepper
2 T. Worcestershire sauce
**** mix sauce and pour over meatballs. Cover and bake on 350 for 1 1/2 hours

POTATO CAKES!!
my mom and grandma King used to make these when I was a kid and I thought they would be good for tonight since I have left over mashed potatoes from last week. here again, this is a combo of a few recipes that I found on "ALLRECIPES.COM
4 Cups Leftover MASHED Potato's
2 cups Panko bread crumbs *DIVIDED*
1 egg beaten
1 garlic clove minced
1/2 cup sour cream
1/4 cup any type of shredded cheese ( I am using colby jack)
*** Mix all of these together and in a HOT skillet with butter or cooking spray or olive oil
fry on each side until golden brown. (Paula Deen would be proud because of the sour cream, cheese and if you use butter!! :-)
CAN YOU TELL I LOVE THE FOOD CHANNEL!!!
Wednesday
BEEF AND NOODLES
Left over Roast from last week makes for a super easy meal. We need REALLY EASY AND QUICK meals for Wednesdays. With Brad working with the youth group at church and me working on Wednesdays it is a challenge to get it all done before he has to leave and or the youth guys get to our house. So I try to plan to make easy peasy suppers that night.
I haven't made this recipe yet so Not sure how it will turn out.
I will blog about it later this week. :0
1 bag of any type of noodles you like ( my favorites are Mrs. Yoders or Inn Maid or of course Aldi's brand)
Left over beef or stew meat. (about 2 cups)
Left over gravy or beef broth to make some
Salt and pepper
Cook noodles
Heat up gravy or make some
Heat up meat or cook stew meat
Mix all together in a large pot.
*** I have some beef broth on hand to thin out my gravy as needed*****
I hope it turns out ok. We shall see.
THURSDAY
CHICKEN BURGERS AND POTATO SKINS
The chicken burgers come from Gerber Poultry. They are already made patties that come
4 in a package. You cook them from a frozen state and they are all natural. (Gerber poultry is pretty much the ONLY chicken we buy. We have not had any trouble with Brad's food allergies with this chicken or these burgers. Since we have to be careful with his food allergies. There is something in processed foods that he is allergic to. We have absolutely NO idea what it is.)
I just cook them in my iron skillet or grill them with a little seasoned salt, garlic and onion salt sprinkled on them.
POTATO SKINS:
Bake potatoes in the oven or if you are a working woman/mom put them in your crock pot
with a little butter and some beef broth in the morning and cook them for 4 - 6hours on low. (they will be done by the time you get home. Especially if you have a crock pot that goes to warm after cooking time is up.)
Cut the potatoes in half and scoop out some of the potato (you can save that potato and make a Saturday am breakfast with bacon/sausage and onions or make potato cakes ;)
Fill potatoes with what ever you like. I use broccoli, and cheese, then I will make a few plain cheese ones for the kids, and the other week I had left over sloppy joes that I mixed some Sweet Baby Rays BBQ sauce with and put that in them with cheese. YUM!!
***Place on cookie sheet and bake in your oven at 375 degrees until cheese is all melted.
** Serve with sour cream, ranch or French salad dressing.

CHEESEBURGER SOUP!!!
CHEESEBURGER SOUP

INGREDIENTS
2lbs Ground Beef
1 medium Onion Chopped
4 Cups diced potatoes (I use little red skinned potatos and leave skins on)
4 stalks of celery chopped fine
2 cups carrots chopped fine
1 box Chicken Stock
2 cups water
SOUP BASE
1 stick of Butter
3/4 Cup flour
3 cups Milk
1lb Velveeta Cheese
1-2 Cups of shredded Cheddar Cheese

Brown ground beef and onion. Drain
Add chicken stock, water and vegetable to beef in large soup pot (Your big pot that comes with pots and pans is NOT big enough for this recipie!!!!)
Bring to a boil.
Boil for 20 minutes or until vegetable and potatoes are tender.
In a saute pan, stir butter, flour and milk until thickens. (will take a few minutes!)
Add velveeta and shredded cheddar cheese. Stir until melted. Then add to soup pot.
***DO NOT LET SOUP COME TO A BOIL AFTER THE CHEESE BASE IS ADDED!!!!!*****
stir until blended.

Ok so I post all the time of Facebook about what I am making/planning for dinner for the week.
So I am making a spot to post all of my recipes and menu's for the week. Making out my menu
has really helped us save some money. Especially for the days that I work. So for all my working mom friends out there and those that are SAHM's it is just my way of helping you maybe think of something different for dinner or just be nosey about what I am cooking this week.
So let me know what you think. This is going to be my way of "ME TIME" Sitting at the computer typing since I have so much spare time anyway :-)
