Tuna Cakes

TUNA CAKES


These are yummy, quick and easy. Oh yea and cheap too. I usually have these ingredients on hand.  The original recipe is from Kraft "Food and Family" Magazine. We liked those, but I of course doctored it up a little.

2 Cans (5oz ea) light Tuna in Water.  DRAINED, AND FLAKED
1pkg (6oz) Chicken stuffing mix **(I will add a little more depending on cosistency)
1 cup shredded cheese of your choice. **(I have used cheddar or colby jack. Both are very tastey)
1/2cup Water(Add this last and add it slowly. You don't want them too runny. So you may need less H2O)
1/3cup sour cream
1 large Carrot or 6 Medium Baby Carrots SHREDDED
1/3cup Miracle Whip
2Tbs Sweet pickle relish.  **(I use chopped sweet pickles)

Mix all ingredients together. Refrigerate at least 10 minutes (LONGER IS BETTER, but not neccessary.)
Heat a large non sitck skillet sprayed with cooking spray on medium heat. 
Use you 1/4 cup measuring cup to measure out portions.
You will need to cook them in batches.
Flatten into patties and cook for 3-4 MINUTES on each side until golden brown.

awesome with corn and a small salad.
